Las siglas IQF hacen referencia al acrónimo inglés de, Individual Quick Freezing, o lo que es lo mismo a la congelación rápida individual. La IQF es un método de ultracongelación, la cual se basa en congelar los alimentos en el menor tiempo posible. Dicho tiempo, suele ser normalmente unos minutos, y a temperaturas muy bajas, pasando rápidamente la temperatura de cristalización del agua hasta llegar a temperaturas inferiores a -18º.

De esta manera los diminutos cristales que se forman al congelarse el agua no alteran la estructura del producto, por lo que permite que los alimentos mantengan intactas todas sus propiedades sensoriales y su valor nutritivo.
